Today is Miss 'Z's 8th Birthday!
I found a rainbow cake that I wanted to recreate.

Yesterday I started with these...
Yes...generic white cake mixes and gel food colour...
After a bit of mixing with eggs, oil & water...
And then dividing into some cereal bowls...
I added the colour...
Check it out...
Almost looks like Easter doesn't it?
Then into the prepared pans it all went.
Leaving me with these...
So after some time baking, cooling and cleaning up I put the cakes into the freezer in preparation for icing.
Later that night I stacked and iced the 6 cake layers...
Here's my version iced.
I thought it was kinda cool seeing it with the inspired version...

Now I must break here and tell you what I did for MY icing!
The 'Idea Room' blog gave a recipe for icing using Cool Whip.
'Cheeky Kitchen' blog gave a recipe for a white chocolate icing.
I COMBINED BOTH OF THOSE RECIPES!!!
I did NOT use the amount of butter that they called for.
Basically I followed the white chocolate icing recipe and folded in the Cool Whip.
It looked pretty bad in the middle stages but I just kept whipping it and it ended up so light and fluffy!!!
This icing is fabulous!
I am NOT a white chocolate fan but I LIKE this icing!
It's not overly sweet either...that is my pet peeve about icings...TOO SWEET!
I would definitely make MY icing again!

Ok...back to the cake...
Into the fridge it went overnight...
Today we sorted Skittles and finished the decorating...
I KNOW!
Sooooo cute!
I should say that the icing had hardened a tad and so I smeared some leftover 'fresh' icing over the areas where I wanted the Skittles and mini marshmallows to adhere.
Before the cutting I wanted to capture a few pics of 'z' with her special cake...
She was THRILLED with it!
I am so pleased with how it turned out!
This cake was such fun to create!

I don't want to sound boastful or braggy but I am SO TICKLED with this cake!

Just a note...
We were eating this cake for THREE days!
It actually got better and better each day!
Thought I would share that in case you decided to make one for yourself and needed to make it ahead of time.
It's the PERFECT cake for that.
