Tried this recipe...
... and tweaked it...
I started with my own 'za dough...
I add basil & oregano into the dough...
Then followed the recipe for caramelizing onions...
I hadn't done the thyme, bay leaf and S&P version before so we did!
YUM!
Caramelizing onions takes about 45-60+ minutes....
But it is SO worth it!
We also had some baby greens in the fridge and so I lightly dressed them and we perched them on top once the pizzettes were out of the oven...
You'll also notice a puddle of EVOO & Balsamic reduction on the plate...
OH MY!!!!
It was WONDERFUL!!!
You've heard me type about a restaurant called 'Atlas' before...
They do a Goat Cheese Tart that is TO DIE FOR!
I eat it every time I go... so good!!!
THIS homemade creation is SO close to that!!!!
We did not have any tomato coulis...
But, other than that, VERY close!
And I wasn't even trying to replicate it!
Very pleasant surprise!
So, if you're in the Courtenay area, DO drop in and give it a try!
If not... go ahead and try the homemade version!
It's delicious either way!
